Norwich and Norfolk locals may remember Mike and Natalie Sweetman from the days of Timberhill Bakery and Random Buns of Kindness.

Now, with their ceaseless energy and never-ending practical skills they’ve created Dark Room Chocolate – with a sensibility that will speak to lovers of natural wine.

Chocolate starts life as the fruit of the Theobroma cacao, the cacao tree.

Most commercial chocolate makers don’t source cacao beans, but begin with cacao mass, which is pre-processed and dark roasted, removing cacao’s complex flavours in the name of homogeneity and cost saving.

Just as with grapes, the unique flavour of single origin cacao is influenced by climate, soil and neighbouring crops, and Mike and Nat seek to capture the terroir of the bean in their cacao roasting and chocolate making.

Their chocolate has just one other ingredient – sugar, which they source from organic farms and worker cooperatives, where farmers are paid a minimum 10% above the organic, fairtrade price.

We can safely say Dark Room Chocolate are producing some delicious, pure, and textured bars and we are delighted to be selling them on our Norwich Market stall and on our website.
