Wow – the crowning glory. The first ‘Amarone’ (or, ‘the great bitter’,) was, legend has it, a sweet wine that failed to finish fermenting. Now it’s an iconic style, far more popular than its sweet relative (ever heard of Recioto della Valpolicella?).

This is a full appassimento wine, meaning all the grapes are dried before pressing, severely reducing the yield, but immensely increasing the power and flavour. Expect notes of vanilla, raspberries, cherries, prunes and leather, and a distinctive cacao bitterness to the finish. Great with game, truffles, dried porcini mushrooms and stilton. Best decanted (any clean jug will do!).

Sip slowly and savour – this is a ‘wine for meditation’ (‘vini da meditazione‘) – and it’s potent stuff, at 17.5%.
