It’s a deft and delicate piece of winemaking from Eloisa de Fermo and Stefano Papetti Ceroni, from their biodynamic estate in Abruzzo where they eschew modern fermentation vessels, and use a mixture of traditional concrete tanks or, in this case, old wooden barrels.

It tastes like flambéed cherries and peaches, with hints of rose petals and tangy pomegranate. Delicious by itself, with white meats or with lightly spiced, especially middle eastern cuisine.
