About Gomez Nevado, Dorado

Craft ‘sherry’. Made in the same way, using a solera, but north of Jerez, in the mountains of Sierra Morena. This family owned and operated small 8 hectare estate was Spain’s first certified organic vineyard.

Gomez Nevado use Palomino, Pedro Ximénez and Airen as their grape varieties; their wines are made using indigenous yeasts, and though the Dorado is 17% in alcohol, it isn’t fortified. They mature in old amphora before being bottles by hand, without fining or filtration.

This is true artisanal wine, from the last guardians of a once proud tradition of solera winemaking in Sierra Morena.

‘Dorado’ literally means ‘golden’, and is the darker of their two solera wines, made from an average of 20 harvests. It has been oxidised, (like an amontillado sherry), and is a flavour explosion, marrying notes of almond and soy sauce with hints of walnut and toffee.

The wine is bone dry, and served chilled, makes an excellent partner to tapas.
