Hayes Family Wines make their UK debut with this elegant low intervention red.

A co-fermentation of organically grown Shiraz, Mataro and Grenache, which are left on their skins in a ceramic egg for 106 days, before being bottled unfiltered and unfined, with a minimum of sulphites.

The result is a wine that combines the generosity and warmth you might hope for in a Barossa red with a surprisingly soft mouthfeel, and supple tannins.

Deep ruby in colour, with enticing aromas of black cherry, blackberry and black olive; the palate reveals flavours of almond, black pepper and dark chocolate.

A beautifully rounded finish makes it enticingly drinkable now, though it could develop in the cellar for at least five years.

Hayes Family Wines are a small independent producer in Barossa Valley, Australia, a region home to some of the oldest vines in the world, many of which are still planted on their own rootstocks, something rarely seen in Europe post-Phylloxera. Hayes’ estate is one of few to be certified organic in the region. Though the fruit for this wine was augmented by purchased fruit from exceptional local sites, and so isn’t certified organic.

Hayes wines are exclusive to Substrata in the UK.
